Our Mangalitsa/Hereford pork chops bone-in are a versatile cuts of meat that is perfect for many cooking methods. Pork Chops can be seared grilled broiled baked or even fried! The bone remains intact which helps to insulate the meat during cooking for a more tender texture and even doneness. To showcase its wonderful flavor use a dry rub with salt pepper oregano thyme rosemary and garlic then coat the pork chops and allow it to marinate for a few hours. Add the chops to a pan over medium heat and sear for approximately 3 to 5 minutes per side until a golden-brown crust develops. Transfer the pork chops to a 375 degree oven and reverse sear them until the internal temperature reaches between 140 and 145 degrees Fahrenheit. Serve with classic hearty sides like roasted potatoes haricots verts or roasted apples. Our pigs forage year-round and eat a forage consisting of grass nuts shoots roots and apples and their feed is supplemented with surplus produce from local farms. Since our hogs have a forage diet and are free-range it gives the meat a delicious flavor and is nutritious packed with omega-3 fatty acids vitamins D and E and antioxidants. Even though the Mangalitsa pigs are some of the fattiest their lard contains more monounsaturated fat than that of other pigs making it a heart-healthier option.
